Shared at a recent IDEAS staff luncheon, this slow cooker Massaman Curry was a favourite.
Ingredients
600g Chuck steak300g Chat potatoes1 brown onion210g Massaman curry pastePlain flour to coat steak2 cups chicken stock400ml Coconut cream1 tbs fish sauce1 tbs brown sugar2 tbs lemon juice

Coat beef in flour.
Dice onion.
Add steak, onion and potatoes into slow cooker.
Mix Curry paste, chicken stock, coconut cream, fish sauce, brown sugar and lemon juice and pour over ingredients.
Cook in slow cooker for 8 hours on low.
Serve with rice.
