Christmas is a time for sharing traditions. This is a simple recipe for Rocky Road with a festive twist.
Great for parties and to share with friends. Package it in glass jars with some ribbon as a gift. We promise you will be asked for more!
What you need
Ingredients
- 4 cups (600g) white chocolate (melts or broken up block)
- 3 tablespoons vegetable oil
- ¾ cup (105g) pistachios, chopped (leave these out if nut allergy is a consideration)
- 50g mini marshmallows
- ½ cup (100g) red glace cherries, halved
- ¼ cup (20g) shredded coconut
- Turkish delight, chopped
Tools
- Roll pan or sandwich tin
- Knife
- Chopping board
- Measuring Cup and spoons
- Medium Bowl
- Microwave
- Spoon
What to do
- Grease and line a 31cm x 26cm sweet roll pan, with greaseproof paper, allowing a 2cm overhang at both ends. In a medium bowl, combine white chocolate and oil. Melt in the microwave at intervals of 30 seconds and stir until smooth. Add pistachios, marshmallows, cherries, and coconut. Stir until well combined.
- Press the mixture into the prepared pan. Refrigerate. for 3 hours or until firm. Use the ends of the greaseproof paper to help lift the slice from the pan.
- Cut into slices. Store in an airtight container in the fridge.
